RETHERM
The regenerative function of your Chef'sCombi oven is designed to reheat pre-prepared dishes while maintaining their texture, flavour and nutritional
quality. Ideal for large kitchen environments, this function uses a combination of heat and humidity to reheat food evenly, preventing it from drying out
and overcooking. Thanks to these advanced features, the retherm can be used to heat large quantities of food quickly while maintaining optimum
quality.
Your Chef'sCombi offers three categories of regeneration adapted to different needs: the regeneration of plates or trays level by level for the A la
Carte and Retherm categories, and by batch of plates for the Banquet category.

11.1.1 A LA CARTE
The "A la carte" function allows plates to be reheated level by level using "MenuMix" (►MenuMix) with default preset mode, temperature and
humidity settings. These default settings, developed by our chefs to best meet your requirements, are designed to meet current requirements, but can
still be modified to better match your recipes and preferences
Selecting this category brings up the "Preset timers" screen with options for setting the cooking environment. You can use this mode in Expert or Auto
display, depending on the default configuration
defined setting ranges for greater precision.
Settings include Convection or Mixed mode, a cooking chamber temperature adjustable between 248°F and 320°F and a humidity level adjustable
from 30% to 60%. The fan speed can also be changed to ensure even cooking. The timer, initially set by default, can be adjusted directly from the
screen without having to access the "Settings" menu.
» Press the « Retherm » icon.
The screen displays the Retherm type.
» Press the « A la carte » icon.
The Preset Timers screen is displayed, along with the message « Cooking ambiance »

If necessary, change the cooking cavity ambiance settings.
» Press the « ✓» icon to confirm.
The 'Preset timers' screen appears.

Go on to set your cooking parameters (►MenuMix).
