3.3 Extraction ratio
The extraction ratios obtained in the conditions mentioned above
are included between 60 and 70% according to the milling
characteristics of the wheats.
It is very important to know that the extraction ratios between these
limits have no influence on rheologic tests on dough, for instance
the alveograph test (however, do not fall below 60%, nor exceed
70%).
3.4 Adjustment of the beater blades
■ Break
The two blades at the end of the beater are the only ones to be
adjustable. Their role is to speed up or to slow down the products
inside the sieve chamber to reach a correct sieving, obtained in an
average time of 1 mn 30 s.
The positioning of the blades depends of the stress of the sieve
material. It is necessary to modify it when changing the sifter.
The sifter material must not be stressed for the beater to vibrate it
and to ensure the sieve cleaning of the material.
■ Reduction
The adjustment : proceed in the same way as for Break adjustment.
However, if the sieve chamber cannot be emptied in 1 mn 30 s, it is
possible to modify the adjustment of the last two blades which slow
down the products output, by slightly opening the angle, to reach a
time of 1 mn 30 s without reducing too much the flour yield.
The sieve cleaning is performed the same way as in the breaking
