- Compress the belt from the right hand side (fig 41).
- Take one of the side joint links and, after noting how the edges of
the belt are fitted (fig. 43), hook up first the outer side part and then
the inner one, if necessary with the aid of a pair of long nosed pliers.
- Repeat this operation for the link on the opposite side.
- Hook up the intermediate pieces (fig. 44) and, with the aid of the
pliers, straighten any links that may have become bent.
- Insert the little tubes onto the links, position them at the centre of
the joint and squeeze them at the two ends (fig. 45), checking to
ensure that they do not slide.
- Check that the belt is flat, and straighten any bent segments.
- Remove the compression at the end of the belt.
- Check manually to ensure that the belt is sliding properly.
- Replace the conveyor belt in its housing inside the cooking
chamber, and replace all the other components following the
operations described in point 5.2.2
WARNING! Make sure that the belt turns in the direction
indicated in fig.46, the hook-shaped ends must never move in a
direction that will tend to become hooked up, because this would
not only damage the belt, but would also render them extremely
dangerous and liable to hook onto any loose clothing, limbs,
rings, bracelets etc.
WARNING! To prevent the belt from squeaking, lubricate it
with a thin layer of spray oil exclusively of a type approved for
use with food products, which must be sprayed in the smallest
possible amounts when the appliance is turned off and cold, and
only on the two parts of the belt that are outside the cooking
chamber, taking particular care to spray on the wheels at the two
ends of the belt. When carrying out this operation particular
attention must be paid to dangers such as flammability, risk of
explosion and the like, indicated on the spray can.
5.8.3
CHANGING THE CONVEYOR BELT DIRECTION
OF ROTATION
After carrying out the operations described in point 5.1, to change the
belt direction of rotation proceed as follows:
- Remove the conveyor belt from the cooking chamber using the
operations described in point 5.2.1, dismantle the belt using the
operations described in point 5.8.1, turn the belt in the direction
required and reassemble it using the operations described in point
5.8.2.
- Open the panel holding the electrical components, using the
procedure described in point 5.3.1
- On the electronic card, reverse the position of the two wires
powering the gear motor. This will reverse the direction of rotation.
- Close the panel holding the electrical components, using the
procedure described in point 5.3.4
- Remove the ARROW label indicating the direction of rotation (fig.
4) and replace it so that it is pointing in the opposite direction.
WARNING! Make sure that the belt turns in the direction
indicated in fig.46, the hook-shaped ends must never move in a

not only damage the belt, but would also render them extremely
dangerous and liable to hook onto any loose clothing, limbs,
rings, bracelets etc.
5.9
CHANGING THE TEMPERED GLASS
After carrying out the operations described in point 5.1, to change the
tempered glass proceed as follows:
- Open the front door (fig. 35 item Q) and remove the four screws
fixing the inner panel.
- Remove the inner panel and replace the tempered glass.
- Perform the above operations in reverse order to reassemble.
5.10
CHANGING THE MOTOR OR COOKING FAN
After carrying out the operations described in point 5.1, to change the
motor or the fan proceed as follows:
- Remove the rear panel (fig. 38 item D) by unfastening the fixing
screws.
- Disconnect the electrical connections to the motor.
- Remove the braid clamping strip by unfastening the fixing screws.
- Move the insulation and dismantle the rear cooking chamber panel
by unfastening the fixing screws.
- Take it to a work surface, straighten the safety plate and remove the
left hand screw at the centre of the cooking fan.
- Remove the fan with the aid of an extractor.
NOTE! To unfasten it, the left hand screw must be turned
clockwise; the fan will not come out of its housing unless you use
an extractor.
- Should it be necessary to replace the fan only, perform the above
operations in reverse order to reassemble.
- To dismantle the motor, remove the four nuts on the feet of the
motor and take it out.
- Perform the above operations in reverse order to reassemble, taking
great care to ensure that the six gasket rings rubbing against the drive
shaft are replaced correctly. Also make sure that the conical parts of
the drive shaft and fan are perfectly clean and smooth.
- Restore any part of the insulating material that may have been
damaged, and isolate it with aluminium adhesive tape suitable for
high temperatures.
5.11
SETTING
CENTIGRADE/FAHRENHEIT
The control unit can be set up to show the temperature in degrees
Centigrade or in degrees Fahrenheit. When changing from one
setting to another, once the dip-switch has been set to the required
position the actual change will take place as soon as one of the
buttons is pressed, or the first time the image shown on screen is
refreshed.
After carrying out the operations described in point 5.1 above, to
carry out the setting proceed as follows:
- Unfasten the screws fixing the control panel (fig. 40 item H).
- Change the dip-switch (fig. 40 item 3) on the four command LCD
monitor to OFF or ON according to the temperature scale you wish
to use, as follows:

- Perform the above operations in reverse order to reassemble.
5.12
ADJUSTING SCREEN CONTRAST
After carrying out the operations described in 5.1 above, to adjust the
screen contrast proceed as follows:
- Unfasten the screws fixing the control panel (fig. 40 item H).
- Using a small screwdriver, turn the regulator screw (fig. 40 item B)
until you have the required level of contrast.
- Perform the above operations in reverse order to reassemble.
5.13
CHANGING THE BELT DRIVE PIN
The belt shaft is driven by means of a safety pin, which is calibrated
to break in the event of unusual strain.
After carrying out the operations described in point 5.1 above, to
change the pin proceed as follows:
- Remove the belt joint cover (fig. 36 item U) by unfastening the
screw that locks it (fig. 36 item X).
- Align the holes in the joint and the belt shaft, and remove the
broken pin.
- Insert the new pin (fig. 36 item S).
- Perform the above operations in reverse order to reassemble.
WARNING! Only use original spare parts, as they are made of a
special material that guarantees breakage in the event of unusual
levels of strain.
If a different material is used there is a severe risk of being
hooked up and pulled in by the mesh.
5.14
CHANGING
DETECTOR
NOTE! The lighter and the flame detector are positioned inside
the flame and can deform themselves; during the annual cleaning
check that they are in the correct position. If not, change them.
After carrying out the operations described in point 5.1, to change the
lighter or the flame detector proceed as follows:
- Remove the burner cover (fig. 20 item M).
- Remove the component (fig. 47: lighter item A, flame detector item
R) after removing the corresponding lock nut.
- Perform the above operations in reverse order to reassemble.
NOTE! The lighter and the flame detector must have their
electrode at the distance indicated in fig. 48 and their electrical
connections must be as shown in fig. 47, making sure that the
connection fastons are properly locked.
