21.7. Clean the stainless steel
The steel may oxidise for various reasons:
iron residue left on damp surfaces, limestone, chlorine or ammonia based detergents not
rinsed properly, food incrustations or residues, salt-saline solutions, dry residues of evaporated
liquids.
