4.1. For the cabinet

display fresh, deep frozen or quick frozen
foods, ice-cream and pre-cooked foods (hot
food counters)
operations inside the electrical panel are
reserved for specialist technicians
4.2. For the goods
Instructions
Only introduce goods that are already cooled
to the temperature that complies with the
cold chain
ensure that the cabinet and goods maintain
this temperature at least twice a day,
including weekends
load the cabinet so that the goods that are
displayed for longer are sold first with respect
to those that are newly introduced (rotation of
goods)
load the cabinet in an orderly manner
according to the load limits (cap.17.)
use containers that are appropriate for the
storage of goods
regularly check operation of the automatic
defrost system (frequency, duration, air
temperature, restoration of normal operation,
etc.)

incorrect installation not performed in accordance with the instructions

use by unqualified/ untrained personnel;
defects in the electrical power supply
serious insufficiencies in planned maintenance and cleaning
