Remove the extrusion plate and slide the dough onto the stainless steel plate of the rolling frame.

Replace the extrusion plate.

Use the roller, passing over the dough twelve times (or six return movements) to roll the dough.

Use the dough cutter to cut the dough and remove the excess outer ring.

Place the dough on a resting plate and place the remainder in the resting chamber.

Repeat the steps for the next four pieces of dough, remembering to lubricate the extrusion plate between each piece. After
the final piece has been extruded, press the "Stop" button

F. Cleaning the mixer
During the resting phase, the mixer must be cleaned very carefully before carrying out another test.
Only use microfiber cloths and never use any metal tools.
1.
Open the mixer by removing knobs, opening lid then pulling on the
side.
2.
Remove any leftover dough from the mixer.
3.
Remove and clean the mixing blade.
Mixing blade edges are sharp.
Take great care when handling it.
4.
Remove the F-register and clean it.
5.
Wipe the mixing bowl to eliminate all dough remnants.
6.
Wipe a cloth over the nozzle inlet hole.
7.
Clean the extrusion passage to remove any dough.
8.
Clean the bearing attached to the mixing blade using a cloth and your
finger, then reattach it.
9.
Reattach the F-register and position it as shown below.
10.
Put the side of the mixer back in its original position. Replace knobs
and close lid.
