Basic Recipe for Crêpes
The consistency of the batter mixture depends on the ratio between the amount
of egg and liquid. With a more liquid batter mixture, the crêpes will be thinner.
You can add sugar or herbs to the batter mixture, to suit the fi lling.
Be careful when adding sugar: If there is too much sugar, the crêpes will tear more
easily. Moreover, the less sugar there is, the less the crêpes will stick together.
In cookery books and on the internet you will fi nd a large number of recipes for different types
of crêpe batter mixture and fi llings. To allow you to start baking crêpes immediately, we have
put together a simple basic recipe which is suitable both for sweet and savoury fi llings.
Ingredients (for approx. 12 crêpes):
250 g
fl our
500 ml
milk
3
eggs
1 pinch salt
Any ingredients you may want for the fi lling: e.g. cinnamon and sugar, apple sauce, ham and
cheese
Preparation:
1. Break open the eggs and beat them into a light froth with a whisk.
2. Add fl our and milk. The batter mixture should be slightly liquid.
3. Add a pinch of salt.
4. Allow the mixture to stand for approx. half an hour to one hour.
5. Then give it another good stir. If the mixture is too thick, add a little bit more milk.
