3.12.4 Blast freezing

Blast freezing rapidly reduces the temperature of food down to -18°C, thus allowing it to be stored for
several months in the freezer. The sensory properties, taste, aroma and appearance of food is maintained
through the rapid micro-
molecular structure.
BLAST FREEZING
There are two blast freezing modes: "recipe" and "probe".
Recipe blast freezing does not require use of the core probe, but it is necessary to indicate the weight and starting
temperature of the food being processed.
Core blast freezing allows the temperature at the centre of the food to be measured during the cycle.

AT THE END OF THE PROGRAMME
Regardless of the blast freezing mode selected, at the end of the programme the device emits an acoustic signal and
opens up a notification screen. It therefore enters holding mode, where the cell temperature is held at -21°C until the
user intervenes. Defrosting occurs at the end.
Note: if the door is opened during blast freezing, hot and humid air will be introduced and therefore the
programme will run for longer. In "recipe" mode the duration of the cycle is fixed: if the door is repeatedly
opened, blast freezing may not be perfect. Do not open the door of the device during the blast freezing
cycle.

3.12.5 Cooling

Cooling reduces the wait time to use hot foods. Using this function, freshly cooked foods can be served at
the table or used for further preparation in the kitchen without waiting for normal acclimatisation.
