TIPS AND TRICKS BLAZING ZONE
INFRARED BARBECUEING
How does an infrared burner work?
The gas flame created when the BLAZING ZONE
openings and generates infrared radiation on the surface. This emits concentrated direct heat of up to 900 degrees Celsius onto the food
to be grilled. This makes it possible to work with far higher temperatures in comparison with a traditional gas burner.

We recommend use without the HEAT DIFFUSER in particular for leaner cuts of meat
without a great deal of fat, e.g. fillets, point or flank steaks, etc. The BLAZING ZONE
PLUS therefore allows rapid searing of steaks and other cuts of meat at maximum
temperatures for a tasty crust as a result of a process known as the 'Maillard reaction'.
We recommend that you avoid very fatty meats when barbecuing at very high
temperatures and use only a very small quantity of a heat-resistant edible oil to
avoid flare-ups.
Using the BLAZING ZONE
to work at lower temperatures between 200 and 350 °C to barbecue as normal on
this additional grill surface. If you want to barbecue fattier meats such as rib-eye,
chops, sausages, poultry or even vegetables, we recommend you use lower
temperatures to avoid burning food and flare-ups as far as possible. The HEAT
DIFFUSER also ensures that fat does not drip directly onto the burner but is instead
channelled to the front by the grooves.
