Blast chilling

Select Menu 01 to set and start a blast chilling process. Push

Note: During a chilling process, it is possible to access Menu 01 to view the settings, but they can not be
changed during a running process.
The rate of chilling and freezing depends on the following factors:
The form, type and material of containers in the cabinet.
Whether or not the containers have lids.
The properties of the food (density, water content, fat content).
The temperature of the food at the beginning of chilling/freezing.
The heat conductivity of the food.
The fast chilling/freezing time is also dependent on the way the food is handled. To facilitate fast chilling, the
contents of a 1/1 GN pan should not exceed 3.5 kg, or contain a food layer thickness of more than 50 mm.
When dealing with difficult and/or large items the layer thickness should be reduced further.
Place items of food in the blast chiller so that they are evenly distributed over the entire internal height of the
cabinet. 1/1 GN pans should be placed as close to the blast section as possible, with the distance between
them sufficient to allow suitable air circulation (about 25 mm).
