dd liquid ingredients to the chocolate before melting – never add cold liquids to the warm
chocolate. Some suitable liquids are:
- Crème liqueurs (e.g. Batida de Cacao, Baileys, dvocaat, or Kahlua)
- Liqueurs (e.g. maretto, Crème de Cacao (Bols), or Grand Marnier)
- Brandy (e.g. raspberry or cherry brandy or nut grappa).
TIP:
lcohol content varies according to brand and type. We can therefore only make suggestions. The
following procedure has been proven:
dd max. only 2 cl (a small shot glass), as more alcohol can cause the chocolate to curdle and the
fountain will slow to a drip.
If you want to add more than 2 cl of alcohol, you must add vegetable oil at the same time. This will
make the fountain flow again.
• Some people like fruits with soft chocolate, some like it firmer. To give your guests the choice:
• Serve the pieces of fruit on plates that have been pre-chilled in the refrigerator. To keep the fruits
cold longer, you can fill a bowl with ice cubes and place the plates on it. If desired, the
chocolate treats can be cooled in the refrigerator after coating.
