Step 6. Lower the knife blade into the FINE/CERAMIC sharpening slot keeping
the blade level. If your blade makes contact with the sharpening wheels and
self aligns itself, pull through the slot from heel to tip. (Never back and forth.)
Using moderately light downward pressure on the blade. if your blade doesn't
make contact with the wheels, pull back on the knife slowly until the blade drops
down into the slot and makes contact with the sharpening wheels. Upon contact
pull through slot from heel to tip. (Never back and forth.) Using moderately light
downward pressure on the blade.Use a smooth, consistent stroke to pull the
knife blade through the slot at a speed of 1 second per 2 inches. If the blade
curves up to the tip, lift the handle near the end to sharpen all the way out to the
tip of the blade (see Fig. 6).
When the tip of the blade reaches the entry/exit
area on top of the sharpening slot, lift the blade upward to exit the sharpening
slot (see Fig. 7).
Step 7. Repeat a minimum of 10 - 15 times. NOTE: Knives made of extremely
hard steel may require additional pulls through the slot to properly finish the
edge.
Step 8. Check the sharpness of your blade by cutting a piece of paper or a
fruit or vegetable. If additional sharpening is needed repeat
process until sharp, but make sure to clean your knife before
continuing. If knife is sharp, turn off power to the machine.
Light honing of any kitchen style knife with a bevel on
BOTH sides of the knife blade that has an ALREADY SHARP
cutting edge. (USE FINE/CERAMIC SLOT ONLY)
Step 1. With power off, turn Angle Adjust knob to 10° to reset
wheel adjustment mechanism, then turn to the sharpening angle desired. Use
the charts provided in this manual to find the original factory angle for your
style and brand of knife. If the original manufacturer's angle is unknown, we
suggest using the Common Sharpening Angle listed in the knife angle chart or
recommended on the Angle Adjust knob. (see Fig 8)
Step 2. Turn the power on, then position knife blade over the FINE/CERAMIC slot
so that the heel of the blade is aligned with the entry/exit area
on the top of the sharpening slot (see Fig 9). Hold the knife
blade level with the wheels just above the sharpening slot.

Adjusting to a larger or smaller size angle than originally on the knife.
Always start by turning the knob to 10°, then turn the knob to the correct
angle.
If you choose to take a knife with a wider angle such as 20º or more per side (40º
combined) and sharpen it at a thinner angle keep in mind you will be changing
the angle drastically from its original factory edge and will require extra pulls
through the diamond wheels, which could be as many as 20 or more additional
pulls. This will remove quite a bit of metal. If you wish to take a thinner angled
knife such as 16º per side and want to make its angle wider, this is possible and

it will only take a few pulls through the diamond wheels. ALWAYS KEEP IN MIND
THIS WILL CHANGE THE ORIGINAL FACTORY ANGLE. IF YOU WANT TO ACHIEVE A
FACTORY EDGE, ONLY SHARPEN THE KNIFE TO THE FACTORY PROVIDED ANGLE.
IF THAT ANGLE IS UNKNOWN SMITH'S SUGGESTS USING COMMON SHARPENING
ANGLES LISTED IN THE KNIFE ANGLE CHARTS PROVIDED OR AS INDICATED ON
THE ANGLE ADJUST KNOB.
Sharpening Serrated Knives
Step 1. Open serrated blade sharpener on side of housing.

Step 2. Pull the serrated portion of your knife blade
through SERRATED sharpening slot 8-10 times using light
downward pressure. Allow the knife blade to rise and fall
as the serrated portion of your blade is pulled through the

NOTE: Never place a serrated blade into the interlocking wheels!
Step 3. Check the sharpness of your serrations. If additional sharpening is
needed, repeat process until sharp. If not, close the serrated sharpener back
into the housing.
