Cleaning electric ovens
To avoid trouble during operation and for reasons of hygiene, the
appliance should be cleaned every day after being used.
To facilitate cleaning:
The side supports for the containers can be unscrewed and removed.
The oven base can also be removed. The heating element providing the
bottom heat can be lifted up.
The side supports and the baking trays can be washed in a dishwasher.
Wait until the appliance has cooled down to at least 60-80 °C!
Spray the support grids and the oven cavity with the special cleaning
agent "Combi-Clean" and allow it to act for approx. 10-20 mins. with
the oven door closed and the appliance in idle mode.
Then clean with a coarse sponge and rinse with clear water.
Please observe our "Recommendations for looking after large-
scale kitchen appliances made of stainless steel".
=
When cleaning the appliance, do not bend or displace the
thermostat sensors and the heating elements!
=
When you have finished cleaning the appliance, open the oven
door using the lever to allow sufficient ventilation!
=
Do not spray the appliance with water, a jet of steam or high-
pressure cleaners.
Avoid gritty cleaning agents.
Cleaning behind dividing wall baking oven
- The area on the right hand behind the dividing wall must be
cleaned.
- The ventilator wings on the right behind the dividing wall must be
cleaned.
The ventilator wings must not be damaged or bent!
=
Do not operate combined oven when one of the ventilator wings
are blocked or not installed.
Remove dividing wall: Unscrew the 4 visible screws and remove
dividing wall.
Remove ventilator wings: Undo wheel nut (Attention: left-handed
thread), remove ventilator wheel.
Carefully rinse ventilator wing. Clean oven.
When remounting ventilator wing take care that the wings point towards
the oven door.
When remounting the dividing wall that squares on the sides point
towards the inside of the oven. Make sure the gaps on the sides (about
7.5 mm) between side and dividing walls are even!
Tighten all screws secure.

Operating and cleaning
warming cabinet VAR 009
Operation
The warming cabinet is used to pre-heat serving dishes and, under
certain conditions, to keep food warm.
The desired temperature is set with the thermostat.
=
Due to hygienic reasons temperatures below 60 °C are unsuitable
to keep food warm.
=
Re-heating food is not permitted in the warming cabinets! The
slow process of heating food creates unhygienic conditions!
Cleaning
Clean the warming cabinet with one of the usual cleaning agents for
stainless steel. The warming cabinet can only be used when absolutely
clean.
For easier cleaning the two carrying grids for gastronomic containers
available as accessory can be dismounted.
