Green tea
Green tea can also be prepared in the samovar. It should not
normally be infused with still boiling water, as it may then taste
slightly bitter. Depending on the type, the ideal water tempera-
ture is 50 – 70 °C. Most green teas develop the optimum taste at
around 70 °C. The higher the quality of the green tea, the lower
the optimum water temperature. The highest quality teas are
brewed at a water temperature of 50 – 60 °C.
Normal green teas have to steep for around 1 - 3 minutes, while
high-quality green teas have to steep for only around 1 - 1½
minutes.
Green tea is always prepared less strong than black tea.
To prepare green tea, proceed as described in the chapter Black
tea. Observe the following differences:
Dosing:
Fill the tea strainer of the teapot with tea leaves (roughly 1 g
per 100 ml or roughly 1 level teaspoon for 200 ml water) or
place tea bags (dosage according to the producer's instruc-
tions) into the teapot (without strainer).
When the water has boiled:
Preheat the cups by filling them with some hot water (the
teapot has already been preheated by placing it on the water
tank during the boiling process).
Turn the rotary knob back to position
to cool down for approx. 5-6 minutes. Then pour the hot water
from the water tank over the tea.
