Hergóm offers the following accessories
for this cooker:
• Steel pipes in vitrified enamel.
Do not use as fuel wood from the sea;
salts
contained in
combustion releasing acids that damage
the cast iron and the steel plate.
Before using your cooker you should be
familiar with the maintenance of the hob
you have bought. The necessary advice
is given in chapter VI.
Each cooker comes wi t h a set of tools
comprising a poker for the fireplace and
a scraper to clean the ash pan and the
smoke condui t through the soot cover
door which is located under the oven.
Before lighting the cooker it should be
ensured that the smoke conduit is
absolutely clean so that a good chimney
effect can be obtained.
When lighting the cooker, close the
wood door, open the primary air valve by
turning i t s knob, and the direct draw
valve by moving towards the outside a
brass lever located above the oven door
(only in the case of closed cookers).
When a normal level of combustion has
been achieved, close the direct draw
valve by returning the brass lever to its
normal position (only in the case of
closed cookers).
Regulate the draw of your cooker by
means of the primary air valve, always
taking into account that a draw that is
too far open will not only mean a higher
consumption of coal or wood, but will
also mean that the hob reaches too high
a temperature.
Never fill up the fire chamber completely
with fuel or leave the ash pan door open.

Do not place wood or coal in front of the
loading door.
The recommended chimney draught
is 1.5 mmca. In order to operate
your cooker in a controlled manner,
and to avoid extremely strong fuels,
a grill with 12 openings is supplied.
If when it is installed your cooker
does not
reach the appropriate
operating temperature, open more
holes in the grill until a suitable
draw is achieved.
Always control the temperature of
the oven of your cooker by using
the thermometer on the door. If the
temperature reaches 250ºC (the
yellow area of the thermometer), do
not provide more fuel, close the air
inlet valve of the ash pan, and if
necessary open the wood loading
door to curb the combustion.
If the cooker heats up to excess, i.e.
if there is an oven temperature of
over 300ºC (the red area of the
thermometer) this may lead to a
deterioration of the hob.
During annual cleaning, or whenever
necessary, check the condition of the
lower part of the work surface below the
glass-ceramic hobs. Proceed to change it
if necessary. This plate simply fits into
the frame, and replacing it is very simple
and cheap.
Food can be prepared more rapidly if the
saucepans,
frying
utensils used have perfectly flat bottoms.
