Single Layer Sponge Cake or Fairy Cakes
Serves: Makes 18cm cake or 8-10
fairy cakes
Set temp: 180°C
Set time: 20 - 25 mins for sponge
15 mins for fairy cakes
Ingredients:
Sponge:
100 g Self raising flour
100 g Caster sugar
100 g Margarine
2 Eggs
1 tsp Water
Few drops vanilla essence
Topping:
Glace Icing made with 6 tbs icing
sugar mixed to a thick paste with 1
tbs water. Decorate with Smarties
or chocolate buttons.

Directions:
1. Sponge: Make the sponge by putting all the ingredients into
a mixing bowl and beating with an electric mixer for 1 min
until creamy, light and smooth.
2. Spoon the cake mixture into prepared cake tin or fairy ca-
ses and fill ¾ full, place into the removable pan (you may
need to cook the fairy cakes in 2 batches).
3. Place the removable pan in the Low Fat Air Fryer.
4. Select: Grill function.

Adjust: TEMPERATURE 180°C and adjust the TIME to
15/20 mins. Start cooking.
6. When cooked the sponge will be springy to the touch and
golden brown, if not cooked put on for a further 5 mins.
7. When cooking is complete switch off.
8. After cooking turn the sponge/fairy cakes out onto a coo-
ling rack.
9. Make the glace icing.
10. Once cooled decorate to suit your taste.
11. Allow the Low Fat Air Fryer to cool before cleaning as per
User Manual instructions.
Tips: Use a well-greased cake tin, or a circle of baking parch-
ment in the base. Or 8-10 fairy cake cases, doubled up. Add
water slowly to the icing in order to get the desired consisten-
cy for coating the top of the cake/fairy cakes.
