❏ Use good quality fruit and vegetables, washing
them throughly.
❏ Use throughly washed rubber seals and lids.
❏ Change the lids when they start to get old and
when the lip starts to get dirty. Fit the rubber seal
on and close each lid with its spring.
❏ Place the jars on the tray at level 1, so that they
do not touch each other nd pour 1/2 hot water,
around 80
0
C over them.
❏ Close the oven and place the thermostat control
at 80
0
C.
❏ Switch off oven when the jars get covered with
drops, small bubbles start forming at regular
intervals.

level. Fill the tray with the jars and pour water onto
it:
As soon as air bubbles begin to form at regular
intervals inside the jars (if they contain fruit), switch
off and leave the jars inside the oven for about 30
minutes. If they contain vegetables or tuna fish,
when the bubbles start to form at regular intervals,
lower the thermostat to 1250C and keep at this
temperature for 90 minutes. Then turn off and leave
for 30 minutes inside the oven. If a lot of water on
the tray evaporates, replace with hot water.

as Above except that once the bubbles begin,
lower the thermostat to 100
Once this process has been done and after the last
30 minutes wait inside the oven, take the jars out
and cover them with a cloth and leave to cool for
about two hours, away from draughts.
Turn the jars over onto a piece of newspaper, to
check that no water leaks out and that they are
waterlight.
