PEANUT BUTTER CREAM FILLED CHOCOLATE CUPCAKES
1 (19.5-oz.) Package
Brownie Mix
2 Eggs
½ Cup Vegetable Oil
¼ Cup Water
1 ½ Cups Semi-Sweet
Chocolate Chips
FILLING:
1 (12-oz.) Container
Vanilla Frosting
¾ Cup Creamy
Peanut Butter
MINT CREAM FILLED CHOCOLATE CUPCAKES
8 Tbsp. (1 stick, 4-oz.)
Unsalted Butter
½ Cup Dutch
Processed Cocoa
2-oz. Bittersweet
Chocolate, chopped
¾ Cup Flour
¾ Tsp. Baking Powder
½ Tsp. Baking Soda
2 Large Eggs
½ Tsp. Salt
¾ Cup Sugar
1 ½ Tsp. Mint Extract
½ Cup Sour Cream
FILLING:
8 Tbsp. Butter,
room temperature
(1 stick, 4-oz.)
1 Tbsp. Milk
¼ to ½ Tsp.
Peppermint Extract
2 Cups Powdered
Sugar

Preheat the CREAM FILLED CUPCAKES BAKERY as directed.
Mix brownie mix, eggs, oil and water in a medium mixing
bowl until well blended. Fold in chocolate chips.
Carefully pour into pastry wells.
Close the Lid and cook for 2-7 minutes.
Open Lid with a pot holder or oven mitt.
Remove each cupcake with wooden or plastic spoon. Place
on plate and allow to cool.
Stir together frosting and peanut butter
in a medium bowl until blended.
Preheat the CREAM FILLED CUPCAKES BAKERY as directed.
Place butter (cut into chunks), chocolate, and cocoa in a
double boiler. As the butter and chocolate melt, whisk
until the ingredients are well combined and smooth.
Remove from heat and let cool to touch. In a small bowl,
sift together the flour, baking soda, and baking powder.
In a large bowl, beat the eggs. Add the salt, the sugar, the
mint extract and beat until well combined. Slowly add in
the chocolate butter mixture and beat until combined.
Add in half of the sifted flour mixture, mix to combine. Mix
in the sour cream. Mix in the remaining flour mixture.
Carefully pour batter into pastry wells. Close
the Lid and cook for 2-7 minutes.
Open Lid with a pot holder or oven mitt.
Remove each cupcake with wooden or plastic spoon. Place
on plate and allow to cool.
Beat the butter at medium speed until creamy.
Beat in the milk and mint extract.
Slowly add in the powdered sugar on low speed,
stopping every now and then to scrape down
the sides of the bowl, until light and fluffy.
Add more peppermint extract or powdered
sugar to your desired taste.
