SWEET PIES
CHOCOLATE CHIP MUffINS
Makes approximately 4 muffins
INGREdIENTS
1 cup self rising flour
½ cup bakers sugar
2oz (60g) chocolate chips
1 egg, lightly beaten
¼ cup oil
L cup milk
METHOd
1.
Place flour, sugar and chocolate chips in
a bowl. Mix well.
2.
Mix together, egg, oil and milk. Stir into
flour mixture.
3.
Preheat the pie maker until the 'Ready'
light illuminates.
4.
Spoon ¼ cup of the mixture directly
into the pie molds and cook for
approximately 9-12 minutes or until
golden brown and cooked through.
5.
Remove the muffins with a plastic heat
proof spatula and cool slightly.
Alternatively, blueberries can be added or
substituted for the chocolate chips.

QUICK CHRISTMAS fRUIT PIES
Makes approximately 4 pies
INGREdIENTS
1 ⅓ cups mixed dried fruit
½ cup orange juice
4 tablespoons brown sugar
2 tablespoons butter
1 teaspoon pumpkin pie spice
4 teaspoons brandy
4 teaspoons cornstarch
4 teaspoons water
Powdered sugar for serving
METHOd
1.
Combine fruit, juice, sugar, butter,
pumpkin pie spice and brandy in a
saucepan. Cook over moderate heat for
2 minutes.
2.
Blend cornstarch with water, add to fruit
and stir until mixture boils and thickens.
Allow to cool.
3.
Preheat the pie maker until the 'Ready'
light illuminates.
4.
Prepare pastry bases and tops. Use L
cup of filling per pie.
5.
Close lid and cook for 8-12 minutes or
until pastry is golden brown.
6.
Remove the pies with a plastic heat
proof spatula and cool slightly.
