21. 7 Clean the stainless steel

Certain situati ons can cause the formati on of rust on the surfaces in steel:
iron remains left on damp surfaces, limestone, chlorine or ammonia based detergents not rinsed
properly, food incrustati ons or residues, salt-saline soluti ons, dry residues of evaporated liquids
recent stains and rust:
Remedy
clean with shampoo or neutral detergents, using a sponge or a rag.
When fi nished, eliminate any detergent residue, rinsing abundantly and thoroughly
drying the surfaces.
old stains and rust:
use chemical substances on the stainless steel that contain 25% of nitric acid or similar
substances.
persistent stains and rust:
sand with a stainless steel brush, wash with detergent and dry thoroughly.
ATTENTION! Slippery fl oor. Falling.
Remove from the fl oor any items such as sponges, rags, waste of water or detergent.
Carefully clean any residue of detergent or saniti zer.

Carefully follow the saniti zing, rinsing and drying procedures to prevent proliferati on of
harmful bacteria.

21. 8 Inspect the parts

Once you have completed saniti zing, rinsing and drying, proceed as follows:

check that all parts are perfectly clean and dry

check that they are not damaged or too worn
3
replace worn parts with new parts supplied only by the manufacturer
4
install the parts perfectly dry
5
restore electrical power supply
Once the internal operati ng temperature has been reached, it is possible to load the products.

22. Load the refrigerant

Only specialist technicians may recharge the refrigerant or work on the gas circuit according
to the European Regulati on 842/2006
Check that refrigerant circuit is perfectly sealed
Only use original approved spare parts

To fi ll with refrigerant, refer to system user's manual.

This interventi on may however cause scratches to the surfaces due to the abra-
sive cleaning method. DO NOT use hydrochloric acid on stainless steel surfaces
