America's Favorite Turkey Giblet Pan Gravy
This recipe makes an intensely rich flavored turkey gravy.
1 tablespoon canola oil
raw turkey giblets, neck, tail
1 onion, chopped
6 cups chicken or turkey stock
2 fresh thyme branches

Heat oil in heavy pan. Add turkey giblets, neck and tail to hot oil. Sauté on high for 5 minutes,
until golden brown.
2. Add onions, and continue cooking 3 to 4 minutes, until soft.
3. Reduce heat to low, cover and cook 20 minutes, until the turkey and onion juices are released.
4. Add stock and thyme. Bring to a boil, then reduce heat to low.
5. Uncover pan, and continue to simmer another 30 minutes. Skim particles from the surface as
gravy cooks.
6. Strain broth, discard thyme and tail. When cool enough to handle, finely chop cooked giblets.
Remove neck meat and chop. Set hot stock mixture aside.

In a large, heavy pan, prepare a dark roux as thickener for gravy. Heat butter and add flour. Cook
slowly for about 15 minutes, stirring frequently until the roux turns a rich brown.
8. Whisk the hot stock mixture into the roux. Bring to a boil, then simmer at least 40 minutes, until
gravy is slightly thickened.
9. When turkey is cooked and transferred to a cutting board to rest, defat pan juices. Add to blender
jar with caramelized vegetables from roasted turkey, blend well, then add to gravy. Stir well and
add to gravy.
10. Continue cooking until gravy is reduced to half.
11. Taste gravy and add salt and pepper to taste. Before serving, add giblets and meat.
12. Pour into the gravy boat to keep warm. Refill as necessary.
Chipotle Gravy
Use this hot and spicy gravy to liven up fish, pork, roasted chicken or turkey. Perfect to serve over
veggies and rice.
Makes: 1-1/2 cups gravy
3 oz. (1/2 can) chipotle peppers in adobo
sauce, chopped
3/4 cup milk

Combine chipotle peppers in adobo sauce, milk, and chicken broth in a saucepan.
2. Dissolve flour in the cream and stir into the chicken broth.
3. Cook on medium heat, stirring frequently, until thickened and bubbly.
4. Taste gravy and add more chopped chipotle peppers or adobo sauce if a spicier gravy is desired.
5. Continue to cook and stir for 1 minute.
6. . Pour into the gravy boat to keep warm.
NOTE: Freeze leftover chipotle peppers in a small zippered storage bag for later use
