Banana ice cream
Ingredients
• 1 Large ripened banana
• 200ml Skimmed milk
Method
1. Mash the bananas until smooth.
2. Mix the milk, double cream and sugar.
3. Pour the mixture into the freezer bowl with the paddle running.
4. Allow it to freeze until the desired consistency is achieved.
Peanut butter ice cream
Ingredients
4 tablespoons caster sugar
3 eggs
250ml full fat milk
200g peanut butter
Method
1. In a medium bowl, beat the sugar and eggs with an electric mixer until thick, this
will take approximately 3 mins, and set aside.
2. Pour the milk into a small saucepan and bring to a simmer over a low heat. Add
the heated milk into the eggs whilst whisking vigorously.
3. Pour the whole mixture into a saucepan and cook over a low heat, stirring
constantly. Keep stirring until thick enough to coat the back of a metal spoon.
Do not boil.
4. Remove from heat and whisk in the peanut butter. Allow to cool slightly, then
whisk in the sweetened condensed milk, single cream and vanilla and allow to
chill.
5. Pour the mixture into the freezer bowl and freeze until desired consistency is
achieved. Add in the chopped peanut butter cups steadily throughout the
freezing process.
