Ambiance raclette oven
(Art. 100.003, for half a round or square block of raclette cheese, 1000W 230V, CE, delivered without raclette knife).
The Raclette is an old Swiss Valais 'peasant' recipe based on cheese melted before a wood fire. Really delicious ! Today, thanks to TTM
devices, the traditional raclette is in the reach of all, easily and rapidly. Carefully read these user instructions before using this device.
Keep these instructions handy for future reference.
Preparing the cheese
▪ Cut the cheese block into two equal parts. A round or square cheese block
may be used because this raclette oven is equipped with the TTM inclinable
"combi" cheese holder.
▪ If necessary, clean the cheese by lightly scraping its brownish and possibly
soft surface with a knife (without cutting the crust).
Placing the cheese in its holder
▪ Lower the cheese holder by turning it clockwise around the threaded shaft
until there is enough space between the heating body and the cheese holder
to place the half cheese in its holder.
▪ Place the half cheese and attach it with the knob. Make sure that the cheese
is properly held by tilting the cheese holder several times.
▪ Raise the cheese by turning it counterclockwise up to a distance of about
2 cm from the heating body. The optimum distance depends also on the
cheese's quality. A raclette cheese made with unpasteurized milk should not
be exposed too violently to the heat. A greater distance is recommended.
Starting the device and preparing the raclette
▪ Connect the power cable to the device's power socket and plug it into the mains power outlet. Use the main power switch to start the device.
When the device is used for the first time, the heating resistance may discharge a light smoke for about 30 seconds. This is normal and not
dangerous.
▪ As soon as the cheese surface is melted (or grilled), grasp the cheese holder with the cheese holder's rubber handle and tilt it. Scrap the melted
cheese with the smoooth side of a TTM raclette knife.
▪ After 4 or 5 raclettes, cut the remaining crusts from the cheese with the tooth side of the TTM raclette knife and serve them with the raclette.
These crusts are called religious" because they are so divinely good.
▪ The raclette must be eaten hot. It is the custom for the served person to immediately savour his raclette without waiting for the other guests to be
served. The traditional raclette is served with unpeeled potatoes, pickles, or vinegar preserved vegetables. As an accompaniment, a dry white
wine or tea will be ideal.
Note : If the raclette is interrupted by a break, it is recommended to shut off the oven to save energy and to prevent the cheese from
being deteriorated by the heat.
What to do with the unused cheese?
After a raclette, it may happen that some of the cheese may be remain unused. Small cheese pieces if well packaged can be saved for 2 to 3
weeks in the refrigerator. The largest pieces can be saved for up to 8 weeks. Of course, raclette cheese can be eaten cold, or be frozen for reuse
later on.

Never soak a device's element, particularly the cheese holder, in water or in the dishwasher. The cheese holder has an anti-adherent coating and
