3.2 BOTTLING
Put the bottle under the tap. Warning: don't hold the bottle in
your hands during filling process, because of thermal shock
the glass could break into splinters: put the bottle into a pan that
could gather them.
Be very careful with any fire exits from the heat source, as they
could ruin the exhaust valves.
Open the tap and fill in the bottle to the brim.
Juice takes about one minute to come out after opening the tap
for the first time.
Check the temperature on tap's thermometer and regulate the
flow so that temperature doesn't go under the required value.
IMPORTANT: You must put the juice in bottles on a regular
basis to avoid differences in temperature.
Cork the bottle IMMEDIATELY after filling, be sure it's hermetic
sealed.
