3. OPERATING THE MACHINE

After having ensured perfect cleanliness of the machine,
proceed with bottling operations as required.
3.1 Loading and starting
Make sure the water discharger tap is perfectly turned off
Fill in the lower pot up with water almost up to the brim.
Screw upper pot on the lower one.
Don't tighten too much to avoid damages to the thread or the
connection.
Heat the water until the desired temperature is reached, which is
usually 90°C. The difference between the water and the juice
temperatures could be of about 10 °C. WARNING: if you do not
reach at least 75°C, the juice fermentation cycle does not
completely stop; as a result, because of the tolerances in
measuring instruments, it is recommended to put the juice in
bottles whit a temperature of at least 78-80°C. Maintain this
temperature by appropriately adjusting the fire and the bottling
speed.
Make sure the water discharger tap is perfectly turned off
Put the juice into the upper pot.
