Functioning
5.3.a - TEMPERATURE ADJUSTMENT
Normally, the temperature value to be set for the
upper dish shall approximately be 10 ° C lower than
the temperature to be set to the lower dish, since the
upper dish tends to get less cold than the lower one.
In case of a lot of work, it is a good rule to set a higher
dish temperature to make sure a proper warming up of
the dishes occurs and the dough does not stick to the
dishes, since the machine standstill period is shorter,
in this case.
The dishes shall be warmed up at a temperature
being not lower than 130 ° C. Under this temperature
value, the dough tends to stick to the dishes.
The dishes shall be warmed up at a temperature not
exceeding 130 ° C. In the event exceed this temper-
ature value is exceeded, the dough tends to bake.
WARNING
The optimum temperature conditions for both dish-
es shall be found by carrying out tests, since the
temperature strongly depends upon the kind of the
dough to be kneaded (temperature, rising condi-
tions, weight in grams etc...).
Don't use dough cold or frozen.
