Loosen the block button of the sharpener group (23). Lift the sharpener group (10) and turn it
through 180° so that both wheels are in working position.

Lower the sharpening group (10) until it engages. Secure the group by turning the locking knob of
the sharpener group. Switch on the machine. Press the button (26) and let the knife run for approx.
1 minute. Then, with the blade stationary, check whether a burr has formed on the cutting edge. If
a burr has formed, switch the appliance on again and press the button (27) for about 3 seconds to
remove the burr that has formed during sharpening.

Make sure that the knob (6) is in position [0]. Turn the sharpening group (10) back to its original
position. Finally, clean the edge of the knife and the protective disk with alcohol.

Sharpening the knife
If the machine does not cut well and the knife is dull, the knife should be sharpened by
qualified personnel.
Note: The knife is very resistant, so it only needs to be sharpened when the cutting
capacity decreases. On slicing machines with integrated knife sharpener, the knife
guard must be on the knife during the sharpening process.
• Before cleaning, remove the plug from the socket and make sure that the knob (6) is
in position [0].
• Clean the part of the blade to be sharpened carefully.
• Insert the plug back into the power outlet.

Replacement of the knife
The knife must be replaced if it is no longer possible to sharpen it or if the distance
between the cutting part of the knife and the knife guard is more than 6 mm. Contact a
specialist company to replace the blade.
