Fry the onions and red pepper in the oil and steam for 3 to 4 minutes, without brown-
ing.

Mix the natural yoghurt, cream cheese, tomatoes and salt and pepper in a bowl.

Add the macaroni and vegetables and mix everything together.

Transfer all ingredients into a suitable casserole dish.

Sprinkle the cheddar cheese over the top.

Bake for 20 to 30 minutes until the top is golden brown.
Hot apple pie – serves 6

Preparation

Pre-heat oven to 200°C/400°F

Prepare short pastry, following the instructions on the packet.

Take 2/3 of the pastry and roll out in a baking tray (23 cm diameter / 9 inches).

Roll up the rest of the pastry and cut into 1 cm strips.

Mix the ingredients for the fi lling and spread out over the pastry base in the baking tray.

Place the pastry strips in a criss-cross pattern on top of the fi lling.
7.
Glaze: paste the pastry strips with the egg and sprinkle on the sugar.
8.
Bake in the oven for 20 to 25 minutes.
Serve the hot apple pie with ice-cream or cream.
