OPERATION

COOK FUNCTION

During the Cook function the center heating element modulates
automatically at regular intervals to assure heat is evenly
dispersed over the tray surface. The temperature intensity is
adjusted by raising or lowering the top housing, or using one or
two heating elements instead of all three. The intensity of the
heat that penetrates the food diminishes as the distance
between the food and the heating elements increases.
1. To turn the unit on, turn the POWER knob to position 1. The
Digital display will flash showing the last setting.
NOTE: The operator can stop or start the unit, turn the heating
elements on or off, or adjust the time setting at any time during
the operation of the unit.
2. Start the Cook function by pressing the COOK button. The
COOK LED will be on during this operation.
3. Set cooking time by turning the ENCODER knob to the
desired time shown on the digital display.
4. Turn on the heating elements to be used. Press the
ON/OFF button of the individual heating element to be
turned on. The corresponding LED of the heating element
will be on.
5. There are two ways to turn the cook cycle on:
A. Press the START button to activate the programmed
settings. The START LED will be on after activation.
B. Place the food plate to be cooked on the cooking grate,
up against the Plate Detection mechanism located
above the cooking grate grill level. This will trigger the
Plate Detection feature and the unit will automatically
activate the programmed settings. The START LED will
be on after activation. (See 7 )
6. When time expires on the digital display a beep signal will
notify the user of a completed cycle.
NOTE: The unit will stay in operation until the food plate is
removed from the cooking grate or the STOP button is pressed.
The STOP LED will turn on once the unit is stopped.
7. Repeat STEPS 1-6 to continue cooking other foods.
8. Turn the POWER knob to the 0 position. Digital display will
go out indicating the power to the unit is now off.

HOLD FUNCTION

When using the Hold function the two side heating elements
are operational. The center heating element is off and the side
elements can be turned off if desired.
1. Set the top housing of the Salamander at the maximum
height level above the cooking grate.
2. Turn the POWER knob to position 1 to turn unit on. The
Digital display will flash showing the last setting.
NOTE: The operator can stop or start the unit, turn the side
heating elements On or Off, or adjust the temperature setting at
any time during the operation of the unit.
3. Start the Hold function by pressing the HOLD button. The
HOLD LED will be on during this operation.
4. Select a holding temperature by turning the ENCODER
knob to one of the 8 temperature settings (level 1=least
intense heat; level 8=most intense heat). Temperature
intensity levels average between 40°C (104°F) to 70°C
(158°F).
5. Turn on the side heating elements by pressing the
corresponding ON/OFF button. The LED of the heating
element will be on.
6. There are two ways to turn the hold cycle on:
A. Press
the
START
programmed settings. The START LED will be
on after activation.
B. Place the food plate on the cooking grate, up against
the Plate Detection mechanism located above the
cooking grate grill level. This will trigger the Plate
Detection feature, and the unit will automatically
activate the programmed settings. The START LED
will be on after activation. (See 7 )
NOTE: The unit will stay in operation until the food plate is
removed from the cooking grate or the STOP button is pressed.
The STOP LED will turn on once the unit has been stopped.
7. Turn the POWER knob to the 0 position. Digital display will
go out indicating the power is now off.
