USE - HOT LINK
This trolley is designed to provide in its chamber maintaining food hot in the framework of regulations. When turned on, maintaining hot
is automatically turned on as soon as the main display comes on in order to ensure a temperature rise in the chamber.
y Use as a hot link
Hot food must be at a temperature above 70°C. The trolley must be turned on at least 1/2 hour before loading in order for the chamber
to be hot, ready for use.
Select the desired mode for maintaining the temperature according to the food :
* Plate mode: prepared plates, ready to use
* Heat without humidification mode: savoury pastries, gratins, crispy dishes...
* Moderate mode: vegetables, fish, «fragile» products....
* Optimal mode: most dishes
In «Chef» mode:
* Temp. (C): 40 to 85°C.
* % Humidification: 0% to 100%.
* the responsibility for the setting is left to the professionals according to the use that is made of the hot chamber.
Check for the presence of water in the tank. The latter is located in the rear of the trolley. To fill it, remove the upper cap and pull the tank
upwards. After filling with softened (without limescale) or demineralised water, place the housings on either side of the tank facing the
trunnions, click in then push the tank downwards. Once in place, close with the cap provided for this purpose. The capacity of the tank is
4.5L (mode 85°C/80% humidity). Each time the door is opened/closed, a humidification boost is triggered, which uses 0.06 l of water.
When used with the door closed, consumption is 0.25 l/h.
Humidification allows for optimal storage of most preparations:
* The reduction in the temperature makes it possible to limit re-cooking phenomena.
* Some foods require the complete absence of humidity in order to retain their texture (savoury pastries...).
It makes it possible to retain the quality of the food on plates without lids for a minimum period of one hour. This timeframe varies greatly
according to the type of food. Using «Bourgeat» plate lids guarantees optimum storage of the food during the entire time of service.
y «Chef» mode
To access the «chef» mode, press the indicated button :
«Chef» mode provides access to the following functions:
* Setting the time of day.
* Setting the date.
* Setting the temperature setting from 40°C to 85°C.
* Setting the humidification rate setting from 0% to 100%.
* Activation/Deactivation of heating (required to use the trolley as eutectic cooling).
* Information and advanced settings.
