OPERATION
Preparations
Fix the machine on the table using the supplied screw clamp and place the crank
in the hole provided, see figure 1. When using the machine for the first time, clean
it with a dry cloth to remove the oil residues. You can clean the rollers by using a
small amount of dough with the rollers. Repeat the process 2/3 times and discard
the dough.
Kneading and pasta cutting
(See Annex 1 for illustrations)
Place the rollers in the standard position by opening them completely (about 3
mm), see Figure 6.
Place your dough mixture between the rollers and operate the crank, see
figure 7. Repeat this process 5 to 6 times, placing the dough again and again
and adding some flour if needed, see figure 8.
Once the dough has taken an appropriate shape (the thickness remains the
same), you can change the roller spacing (Figure 6 and 9) and bring the dough
to the desired thickness.
Once the desired dough thickness is reached, cut the dough into pieces of
equal length(about 25 cm).
Place the crank in the opening for the cutting rollers. Slowly turn the crank
and feed the cut pieces of dough. (Fig. 10 and 11).
Note
If the cutting rollers do not cut the dough properly, the dough may be either
too soft or too dry. Add water or flour to the dough mixture, as appropriate.
Once the pasta is cut, dry it for at least an hour. You can dry the pasta on a
cloth on the table or use a special pasta dryer.
