Beware of the appliance's hot surfaces!
This appliance is designed for professional tise and must only be used by trainedpersonnel.
It is exclusively designed to fry food. Any other use is considered improper.
Never switch on the appliance without any oil.
 In the event of fault, disconnect the electric connection of the fryer.
 Repairs should only be carried out by authorised service centres using original spare parts.
 The oil in the well should be between the bottom and top level lines. If the oil in the well is lower than the bottom
level line, add oil.
 Old frying oil must be changed to prevent the flash point from dropping, thereby increasing the risk of fire. This also
reducer the risk of spitting when the oil is boiling.
 Do not place large or dripping items of food in the fryer as this may cause the oil to spit.
Safety device :
If the oil temperature is higher than the maximum value, limit thermostat will switch off the electric
connection against any probable fire danger. In this situation, call the authorised technical staff.
 After installation and before frying process, remove the protective industrial grease applied on the well and the
baskets. The following steps should be considered for the cleaning process:
 The well should be filled with water up to the heating element. Some detergent should be pouded into the well and
then boil the water a few minutes.
 Open the lover tap and discharge the water.
 The well should be rinsed with clean water properly.
 The remained particles and isolation materials on the equipment may cause some smoke and smell during the first
operation but will die down after a while.
 The appliance should be operated in maximum speed for one hour at first operation.
Filling the fryer well
 Close the well drain cock.
 Fill the well with oil or blocks of lard to at least the minimum reference mark.
IMPORTANT : Never switch on the appliance without any oil.
Turning on the appliance
 In this situation, yellow indicator will be on.
 To heat the fryer, turn the thermostat control knob to the required temperature setting. In this situation, yellow
indicator will be on. When the temperature reaches the required value white indicator will be off.

 When the oil reaches the required temperature, place the ingredient to be fried into the basket. The ingredient should
not exceed 3/2 of the basked.
 After friying process has been completed, switch off the main switch. Then lift the basket up. Finally, place it onto the
well where there is a hole for basket hook. When the oil in the basket are filtered properly it can be served.

Turning off the appliance

 Turn the thermostat and switch control knob back to 0.

Draining off the oil

 Place a heat-resistant container under the well.
 Open the drain cock.
