Cut the pasta sheet crosswise into pieces about 25
cm (= 10'') long. Switch the motor off and place it
in the desired cutting rollers (Fig. 10).
Switch the motor on again and feed the pasta
sheet through the chosen cutting rollers.
Pick up the pasta and transfer it to the Marcato
Tacapasta pasta drying rack. The pasta takes about
2/4 hours to dry, depending on the temperature
and humidity. Once dry, store the pasta in special
containers (Fig. 11) and consume it within a month.
Note:
• if the rollers are unable to "cut"', it means that
the pasts sheet is too soft; in this case, we re-
commend kneading the dough with your hands,
adding more flour and feeding the dough throu-
gh the smooth rollers again.
• If the cutting rollers are enable to "hold onto"
the pasta sheet, it means that the dough is too
dry: in this case we recommend adding a bit of
water, kneading it with your hands and feeding
the dough through the smooth rollers again.
HOW TO COOK PASTA
Bring plenty of salted water to a boil (~4 litres
for half a kg of pasta), then pour in the fresh or
dry pasta (Fig. 12). Fresh pasta cooks in just a few
minutes, on average between 2 and 4 minutes, de-
pending on its thickness. Dry pasta needs longer
to cook (from 4 to 6 minutes), depending on the
thickness. Stir gently and drain the pasta when it
is cooked (Fig 13). Pour the pasta into the pan with
the sauce and add some of the water in which the
pasta was boiled. Stir (Fig. 14) and serve in hot
dishes. Enjoy your meal!

MACHINE CARE AND MAINTENANCE
• Do not wash the machine with water or in the
dishwasher.
• To clean the machine use a cloth and a brush, if
necessary you can use a wooden stick (Fig. 15).
• To ensure thorough cleaning, the combs of the
cutting rollers are removable:
- push the rod sideways (Fig. 16)
- ift the rod and insert one of the two ends into
the central hole of the comb.
- lift the rod and remove the comb (Fig. 17).
• To put the comb back in place, perform the pro-
cedure in the reverse order.
• If necessary, lubricate the ends of the cutting
rollers; only use Vaseline oil.
The presence of a crossed off wheelie-
binindicates that, within the European
Union, the product is subject to sepa-
rate collection at the end of its useful
life.
These products must not be disposed
of together with regular municipal
waste.
