Check thermostat operation regularly by measuring the frying compound
temperature with a reliable frying thermometer. Allow the burner to cycle off
and then check the temperature of the compound. Temperature of compound
should be comparable to thermostat setting.

Keep the fry tank and thermostat probes clean.
Thermostat Calibration
The fryer control is factory calibrated. If cooking results indicate unit is not
maintaining correct temperatures, contact your authorized service representative.
