AUBERGINE FRITTERS
AUBERGINE FRITTERS
Cooking times : 2 hours with choux pastry
Ingredients for 3 people
1 Aubergine
Choux pastry
Sprinkle aubergines with salt and let drain about 20 minutes. Then
rinse aubergines, strain, wipe with kitchen paper.
Prepare your frying bath and turn the temperature setting knob to 190 °C.
As the oil is warm enough cover the aubergines with choux pastry
and immerse in hot oil.
Let it 6 to 8 minutes. Serve in a dish with kitchen paper.
SWEET FRITTERS
SWEET FRITTERS
Cooking time : 40 min
Ingredients for 6 people
300 g of flour
50 g of softened butter
4 soup spoon of caster sugar
a pinch of salt
2 mixed eggs
1 soup spoon of rum
4 soup spoon of icing sugar mixed to 2 vanilla sugar
sachets
Sift the flour. Make a hole. Add softened butter, caster sugar, salt,
eggs and rum in it.
Knead a long time. Put the pastry in ball. Let the flour relax about 5
hours.
Flour your work surface. Flatten the pastry with a rolling pin and roll
the pastry out to 5 mm thick.
Warm the oil at 190 °C.
Cut this pastry in 4 cm large and 10 cm long strips.
Cut the strips in their middle and insert one of the two extreme parts
of the strip in order to obtain a knot.
Fry the strips into hot oil for 6-8 minutes by turning them over one
time. Display them on a dish with kitchen paper and sprinkle with the
preparation of icing sugar and vanilla sugar in sachet.
Advice : prepare the sweet fritter pastry in the morning in order to fry
it in the afternoon.
